15 Minute Donuts from Scratch

I don't celebrate national anything, but when my IG feed was bulging with donut pictures this morning I scrapped the post I had ready and thought I better get this one out. I did a little research too and National Donut Day has a pretty neat history, read about it here. Donuts are one of my very favorite guilty pleasures. I love them! I'd take a donut over a chocolate bar any day. I don't have access to fresh donuts where I live, so I've gotten pretty great at making my own. Easy glazed donuts are my favorite yeast donut recipe, but it's one that I save to make when friends are over.

This quick recipe for 15 minute donuts from scratch is one that I make a lot more often. The recipe comes from The America's Test Kitchen Family Baking Book15 Minute Homemade Donuts | Fast & Delicious Donuts Recipe (2), so you know it's great. It's a great fast way to have fresh donuts on the table without spending hours prepping. We love this recipe! I'll heat the oil, make the dough, and then start frying the donuts in batches while I make scrambled eggs. If I have one of the kids wash fresh fruit we can have a gorgeous hot meal on the table in less than 20 minutes. It's an easy way to splurge a little and is great for holidays or birthdays. Donuts = love. Let your family know they are loved.

What else can I put on donut holes?

This recipe uses powdered sugar because it is an easy and sweet coating that also looks pretty. You can also use granulated sugar and add in cinnamon for some tasty cinnamon sugar donuts!

How do I store donuts?

Allow the donuts to cool before storing them. You can wrap them in foil or plastic and store them in the fridge for about a week, or you can store them in an airtight container in the freezer for up to three months.

Description

This quick donuts recipe comes together in only 15 min & is a great way to have fresh donuts on the table without spending hours prepping. Easy & delicious!

Ingredients

Scale

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup granulated sugar
  • 2 large eggs
  • ½ teaspoon ground nutmeg
  • ½ cup whole milk
  • 2 tablespoons butter, melted and cooled
  • ½ teaspoon vanilla extract
  • 2 quarts vegetable oil
  • Powdered sugar for dusting

Instructions

  1. In a medium bowl add the flour, baking powder, and salt. Whisk to combine.
  2. In a separate bowl add the sugar, eggs, and nutmeg together and whisk to combine. Add the milk, butter, and vanilla extract and whisk to combine.
  3. Slowly add the egg mixture to the flour mixture and stir with a wooden spoon until well combined, but don't over mix.
  4. Heat 3 inches of oil in a dutch oven over medium-high heat until the oil reaches 350 degrees. Using two spoons, make a ball of batter about the size of a ping pong ball. Use one spoon to carefully scrape the dough ball from the other spoon into the hot oil. Repeat this 5 or 6 times and then fry the donuts until they are crispy and very brown on all sides, 3-6 minutes total. Be sure to adjust the temperature as needed to keep the oil temperature at 350 degrees.
  5. Use a slotted spoon to remove the donuts from the hot oil and place them on a paper towel lined baking sheet. Let the donuts drain while you repeat the process with the rest of the batter. Dust the donuts with powdered sugar and serve warm.
  6. These are best eaten right after making.

Have you tried this with whole wheat flour instead of all purpose? Or splitting it half and half?

    • Melissa

I did half and half once, but not all whole wheat. I think the 100% whole wheat would be too dense but the 50/50 was great!

Do you think these could be baked in a donut pan? I have everything besides the 2 quarts of oil.
    Thanks

FAQs

What makes doughnut soft and fluffy? ›

How to Make Super Soft and Fluffy Sugar Glazed Doughnuts | Fried or Baked. There's only one way to make doughnuts even softer and fluffier and that is by scalding some of the flour. Scalding is a technique used to not only make bread softer, but also to make it stay soft for longer.

Can I use baking powder instead of yeast for donuts? ›

You can make delicious chocolate-glazed donuts without yeast using a simple baking powder-based dough.

Why are my homemade donuts so dense? ›

Yeast. Yeast is a tiny yet magical organism that helps doughs of all kinds rise. Without yeast, your doughnuts might resemble dense disks rather than fluffy rings. There are a variety of types of yeasts available for purchase, and some bakers even capture native yeasts to create their own unique doughnut dough.

Why are my mini donuts not fluffy? ›

Underproofed – leads to stiffer (denser) donuts that don't puff up well when fried. Cracked donuts – this may have happened if you used a cutter and it wasn't sharp enough to cut through the dough cleanly. Or the dough is underproofed or too cold.

What is the best flour for donuts? ›

Use real cake flour – not DIY cake flour!

DIY substitutions don't really cut it, and AP flour will not create doughnuts with that same soft texture. Also, bleached cake flour will work best. Unbleached (like King Arthur Baking) won't absorb as much moisture, and you may end up with doughnuts that crumble while frying.

Why are Krispy Kreme doughnuts so soft? ›

The secret ingredient, mashed potato, gives the donuts moistness and tenderness. It's rumored potato is in the secret Krispy Kreme recipe too! The first Krispy Kreme shop was opened in 1937 in North Carolina by Vernon Rudolph, who used his uncle's yeast-raised donut recipe.

What happens if you put too much yeast in donuts? ›

Excessive uses of yeast to hurry the doughs along only causes gassiness, less tolerance to proofing and sometimes collapse when the doughnuts are removed from the fryer. It is not uncommon to use for doughnuts a combination of baking powder and yeast. Water, Don't use too much water in the dough.

Are donuts better with or without yeast? ›

Each side has its proponents, who will argue fiercely that yeast doughnuts are better because they're lighter, and won't stick to the roof of your mouth, or that cake doughnuts are better because they're more filling, more dunkable, and more, well, like cake.

What trick keeps donuts fresh? ›

Place your donuts in storage bags or airtight containers.

Definitely put them in airtight bags or containers though so they stay fresh! The only time this isn't a good idea is when your donuts are cream-filled. In that case, you'll want to store them in the fridge so they don't spoil.

Can I bake my doughnut instead of frying it? ›

Perfect your technique

Spoon the batter into the lightly greased doughnut pans, filling the wells to about 1/4" shy of the rim. Bake the doughnuts for 10 to 12 minutes. Remove them from the oven, and wait 5 to 7 minutes before turning them out of the pans onto a rack.

How does Krispy Kreme make their donuts so fluffy? ›

A batch of original glazed starts with Krispy Kreme doughnut mix, water and yeast, the same single-cell fungi used to make bread rise. The yeast is what makes the original glazed so light -- it puffs the dough up with air, so it's not dense like a cake doughnut (more on this later).

How thick should my donut dough be? ›

Unless the dough is completely relaxed, it will shrink and become misshapen as it is cut. When rolling out the dough, try to get the entire piece down to a uniform thickness (usually ¼" to ½", or 6.4 mm to 1.3 cm, thick).

Why do my donuts crack when I fry them? ›

If you see some cracking in the donut while frying it is perfectly normal and a good sign. This will provide more nooks for the glaze to pool in! Those are my favorite donuts! This also tells you enough baking powder was added to get a good rise from the dough.

What softens donuts? ›

Use buttermilk: Buttermilk helps to tenderize the dough and add moisture. Add eggs: Eggs add richness and moisture to the dough. Add oil: Oil helps to keep the donuts moist.

How do you keep doughnuts soft? ›

Airtight container keep your donuts from getting too stale to take a bite into, but do this and you'll be thanking us later. You must finish them within 1 or days though. In case your donuts are cream-filled or have some kind of dairy-based topping on them, it is best to keep them in the refrigerator.

Why didn't my donuts puff up? ›

The liquid was too hot, or not hot enough.

It will usually tell you to use “warm” water. The water temperature should be between 110 - 115 F degrees. If your liquid is too hot (i.e. boiling) it will kill the yeast and prevent the rise. If it's not hot enough, the yeast won't have the heat needed to bloom.
