Crispy corn tortillas, crunchy fish sticks, layers of guacamole and Pico de Gallo topped with Lime Dressing make these easy Mexican Fish Stick Tacos a quick and easy dinner recipe!

Love crunchy, baked fish sticks as much as we do? Today we are going to turn them into a mouthwatering fish taco.
These fish stick tacos are so easy for a last minute dinner recipe but they have a ton of flavor. Tortillas that are piled high with Gorton’s Haddock Fish Sticks, guacamole, pico de gallo and topped with a lime sour cream dressing.
I bit into one of these and the flavor literally exploded in my mouth and I couldn’t stop eating.
Easy dinners does not mean they have to lack flavor. These fish tacos are proof of that!
The best thing about these tacos is that it combines a few store bought items into a mouthwatering taco. If you don’t want to make your own guacamole or pico then just buy it. No shame in that. This is a quick weeknight meal you can throw together in the amount of time it takes to bake those fish sticks.

Ingredients Needed for Fish Stick Tacos
- Gorton’s Haddock Fish Sticks
- Corn tortillas – If you prefer corn tortillas you can use those, char them before enjoying
- Guacamole – Either homemade or store bought
- Pico de gallo – Either homemade or store bought
- Sour Cream
- Lime juice
- Cumin

- Cilantro
- Sliced Jalapeno
- Sliced Red Onion
- Diced Avocado
Steps to Prepare
- Make Fish Sticks – Prepare Fish Sticks according to package directions.
- Make Toppings or Buy– While those are baking you will need to make your guacamole and pico de gallo if you choose to make homemade version, otherwise you can grab it from the store!
- Prep Lime Dressing – Grab a small mixing bowl and combine the lime dressing ingredients; sour cream, lime juice and cumin.
- Assemble – When the fish sticks are almost done baking prepare corn tortillas according to package directions then layer with fish sticks, guacamole, pico de gallo and lime dressing!
How to Char Tortillas
After warming each tortilla stack them on a dish towel as you go. You’ll want to fold the ends over the stack to keep in the heat while you make the next tortilla. This keeps them warm and steams them a little to soften any stiffness the tortilla has.
- Gas Stove Top – Turn burner on lowest setting and place one tortilla on the burner. Let them sit for about 30-45 seconds and when you can see the bottom is slightly charred flip tortilla over with a tongs and repeat on the other side. The second side will take less time than the first.
- Cast Iron Skillet – Warm skillet over medium-high heat and then place tortillas in skillet for about 10-15 seconds per side.

Ingredients
- 16 pieces Gorton's Haddock Fish Sticks
- 8 flour or corn tortillas
- 1 c. guacamole
- 1 c. pico de gallo
Lime Dressing
- 1/3 c. sour cream
- 1 Tbsp lime juice freshly squeezed
- 1/4 tsp cumin
Instructions
Prepare Gorton's Haddock Fish Stick according to package directions.
Meanwhile prepare guacamole and pico de gallo if you have not done this.
In a small mixing bowl combine Lime Dressing ingredients and whisk until combined. Store in refrigerator until ready to assemble tacos.
When the fish sticks are almost done prepare corn tortillas according to directions.
To assemble tacos place two fish sticks in a tortilla. Top with guacamole, pico de gallo and lime dressing. Serve immediately.
